Pesto grilled three-cheese sammies

The Mister, as a victim to a ferocious flu bug, was bedridden for nearly a week, which meant loading up on lemon honey tea and comfort food. Not much oozes comfort more than grilled cheese sandwiches, and we had a hankering for some from one of my most favorite caf├ęs, so I perused our fridge's contents and devised a grilled cheese sandwich that was a bona fide winner because it features an irresistible ingredient in our books: pesto. Pesto, cheese, and tomatoes are absolutely swell together. I've also sampled one of these sammies without tomatoes, but I am convinced the tomatoes add a refreshing gush of flavor that balance the pesto and cheeses. All in all, these will make your stomach happy, whether you're recovering from a bug or not.

Pesto Grilled Three-Cheese Sammies 
Ingredients: 
Whole wheat bread, sliced
Swiss cheese, sliced
Smoked Gouda cheese, sliced
Havarti cheese, sliced
Pesto
Roma tomato, sliced
Yellow grape tomatoes, halved

Directions:
1. Lightly toast whole wheat bread. On a slice of bread, assemble slices of havarti and gouda. Spread with pesto. Add grape tomatoes and a slice of roma tomato. Top with slices of swiss and gouda. Finish it off with the remaining slice of bread.
2. In a pan over medium-low heat, brown the sandwich until tomatoes are warmed and cheese is melted and gooey.
3. Enjoy with a bowl of creamy tomato soup sprinkled with fresh Parmesan and basil. By enjoy, I mean by dunking the gooey, melty, cheesy sammie goodness into your soup and devouring every single bite. Yum!
