Homemade pizza

It was one of those nights where I had accumulated a rather trying day at work and was stuck on what to conjure up for dinner. We had a hodgepodge of disaggregated ingredients in the kitchen, so I was inspired by a dear friend to make pizza. The Mister has an affinity for pizza, but I am not a fan because the Italian pie is habitually associated with excessive grease. The fortuitous element to crafting it at home is that I know precisely what is going in it, and so we had plenty o' petite pizzas that evening featuring our most favored ingredients, including:

Whole-wheat pizza dough (We like Trader Joe's for the convenience, but I might try making it next time, perhaps from here)
Pesto
Reduced-fat shredded mozzarella cheese
Prosciutto, cut into bite-sized pieces
Yellow grape tomatoes, halved
Sun-dried tomatoes, sliced (I also made one sans sun-dried tomatoes a la the third photo above, but we think sun-dried tomatoes adds a zestier zing to the medley of flavors!)
Fresh parmesan cheese
Fresh romano cheese
Fresh asiago cheese
Fresh basil, shredded

Directions:
1.  Pre-heat oven to 450 degrees.
2. Flour work surface. With a rolling pin, roll 1/4 of the pizza dough into an oval or rectangular shape. We like thin crust, so I made ours as thin as possible.
3. Spread pesto on crust. Top with plenty of mozzarella, prosciutto, grape tomatoes, and sun-dried tomatoes.
4. Bake for about 8-10 minutes, until cheese bubbles. Remove from oven and cool. Top with basil and fresh cheeses. Enjoy!


Barbeque Chicken, Pineapple, and Basil PizzaIMG_1849aIngredients: 
Whole-wheat pizza dough (We like Trader Joe's for the convenience, but I might try making it next time, perhaps from here)
Barbeque sauce (Once again, we like Trader Joe's, but we love Trader Joe's everything.)
Reduced-fat shredded mozzarella cheese
Grilled chicken, shredded
Pineapple, sliced into chunks
Fresh Parmesan cheese
Fresh Romano cheese
Fresh Asiago cheese
Fresh basil, shredded

Directions:
1.  Pre-heat oven to 450 degrees.

3. Spread barbeque sauce on crust. Top with mozzarella, generous heaps of chicken and pineapple.
4. Bake for about 8-10 minutes, until cheese bubbles. Remove from oven and cool. Top with basil and fresh cheeses. Enjoy!


Garlicky Shrimp, Alfredo, Capers, and Parsley PizzaIMG_1843aIngredients: 
Whole-wheat pizza dough (We like Trader Joe's for the convenience, but I might try making it next time, perhaps from here)
Alfredo sauce (Once again, we like Trader Joe's, but we love Trader Joe's everything. I also made one of these with pesto, but we think the alfredo melds all the flavors together more smoothly.)
Reduced-fat shredded mozzarella cheese
Garlic, minced
Extra virgin olive oil
Large shrimp
Onion, minced
Capers
Fresh Parmesan cheese
Fresh Romano cheese
Fresh Asiago cheese
Fresh Italian parsley, chopped

Directions:
1.  Pre-heat oven to 450 degrees.
2. Grill minced onion in extra virgin olive oil over medium heat until browned. Place into a bowl.
3. Brown garlic in extra virgin olive oil over medium heat. Add shrimp and saute until cooked. Place into a bowl.
4. Flour work surface. With a rolling pin, roll 1/4 of the pizza dough into an oval or rectangular shape. We like thin crust, so I made ours as thin as possible.
5. Spread alfredo sauce on crust. Top with mozzarella. Sprinkle grilled onion, and then sauteed shrimp. Top with capers last.
6. Bake for about 8-10 minutes, until cheese bubbles. Remove from oven and cool. Top with parsley and fresh cheeses. Enjoy!


We both adored the shrimp alfredo pizza, for we are fervent fans of the grilled shrimp, alfredo, and capers' harmony of flavors. The Mister also sighed with happiness at the tangy sweetness of the barbeque chicken pizza, which is one of his all-time favorites. And I rather appreciated the conglomeration of yellow grape tomatoes, sun-dried tomatoes, and pesto. Overall, we loved the ingredients' freshness that made our tastebuds absurdly content. Lo and behold, I daresay I'm warming up to pizza pies! And the Mister proclaimed, "This is just like California Pizza Kitchen!" A swell sign, methinks. Cheers.IMG_1863a
