Turkey patty three cheese melt

We're melting over here. Here being sweltering resort city Las Vegas, because we're officially on our first family vacation this week. And I've been warming up to sammies lately, so it's fitting to post on a patty melt. I had never tasted a patty melt prior to the Mister; patty melts are his sandwiches of choice, as he grew up eating them. Therefore, I attempted a rendition of his childhood favorite. I made a turkey patty instead of beef because we had leftover ground turkey in the fridge (and it's healthier). It was mighty tasty, particularly because there are three gooey cheeses and some other fixins'. This sammie might just melt your heart, so do give it a chance.

1/4 lb fat-free ground turkey breast
Garlic salt
Freshly ground pepper
3 tsp extra virgin olive oil
Red onion, sliced
Tomato, sliced
1 slice Swiss cheese
1 slice Havarti cheese
1 slice smoked Gouda cheese
2 slices whole grain wheat bread

1.  Heat 2 tsp extra virgin olive oil in a large skillet over medium-high heat. Saute onions until brown and softened. Set aside.
2. Place ground turkey in a bowl. Season with a few shakes of garlic salt and plenty of pepper. Mix ground turkey mixture thoroughly to distribute spices. Shape into a 1/2" patty.
3. Heat 1 tsp extra virgin olive oil in a skillet over medium heat. Place patty in the pan and cook each side for about 2 minutes, or until browned.
4. Top patty with a cheese slice. Cook 1 minute until cheese melts. Set aside.
4. Toast each bread slice with 1 cheese slice on top until cheese melts. Top a bread slice with turkey patty, grilled onions, tomato slices, and ending with the other cheesy bread slice. Take a bite into the meaty, melty goodness. Yum!

Note: You can spread sammie with condiments (e.g. Dijon mustard, ketchup) before eating per your preference, as I didn't include them in the recipe.
