Pizza pie party

Not too long ago,we were privileged to have dear couples convene with us for a dinner party. So thankful they have been in our lives through the years and shall be in the years to come, especially because the husband during the dinner proclaimed unabashedly that he would name our hypothetical future son Jean ValJean. All I have to say is - good thing we have community to persuade us from enabling a bully's target in our hypothetical future Asian-looking son living in America with a French name - haha! I had limited time post-work to prep before our friends' arrival, so I figured a pizza pie party would be fun and rather simple; I ended up putting together a dozen small pizza pies that are some of our favorites, especially the zucchini, butternut squash, and caramelized onion pizza. Grilled Chicken and Mushroom Alfredo Pizza
Ingredients:
Whole-wheat pizza dough (I used Trader Joe's for the convenience)
Alfredo sauce (I also used Trader Joe's for the convenience)
Reduced-fat shredded mozzarella cheese
Grilled chicken, shredded
1 tbsp garlic, minced
Extra virgin olive oil
White button mushrooms, sliced
Onion, minced
Sundried tomatoes, julienned
Heirloom tomatoes, halved
Fresh Parmesan cheese
Fresh Romano cheese
Fresh Asiago cheese
Fresh basil, chopped

Directions:
1. Pre-heat oven to 450 degrees.
2. Grill minced onion in extra virgin olive oil over medium heat until browned. Place into a bowl.
3. Brown garlic in extra virgin olive oil over medium heat. Add mushrooms and saute until cooked. Place into a bowl.
4. Flour work surface. With a rolling pin, roll 1/4 of the pizza dough into an oval or rectangular shape. We like thin crust, so I made ours as thin as possible.
5. Spread alfredo sauce on crust. Top with mozzarella. Sprinkle grilled onion, and then chicken, mushrooms, and sundried tomatoes. Top with heirloom tomatoes last.
6. Bake for about 8-10 minutes, until cheese bubbles. Remove from oven and cool. Top with basil and fresh cheeses. Enjoy! bbq chicken pizza

Zucchini, Butternut Squash, and Caramelized Onion Pizza

2 small round zucchini, sliced thinly
1 tbsp garlic, minced
Extra virgin olive oil
1/2 cup butternut squash, minced and steamed
Onion, minced
Fresh Parmesan cheese
Fresh Romano cheese
Fresh Asiago cheese
Fresh basil, chopped

Directions:
1. Pre-heat oven to 450 degrees.
2. Grill minced onion in extra virgin olive oil over medium heat until browned. Place into a bowl.

  4. Oh my goodness, these pizzas look delicious. I need to try out these recipes! And I had no idea Trader Joe's had pizza dough...makes things so much easier. Though I do enjoy making the dough. ^^
